Project challenge:

Couscous, a relative of semolina, originated in North Africa and continues to win the hearts of cooks. Couscous is easy to prepare (it cooks in just 1 minute), and the number and variety of dishes it can be used for is truly astounding. Firstly, it’s an excellent side dish that can be served with meat, vegetables, and seafood. Secondly, couscous is often added to vegetable, vegetarian, or Lenten salads for a nutritious boost. It’s also a great addition to desserts. It’s made from durum wheat semolina.
